Yield: 4-6 Servings 

2 C. Shiitake Mushrooms, Sliced

Sprinkle w/Lime Juice, set aside

Blend until smooth:

1/8  C. Lime/Lemon Juice

2 Cloves Garlic

2 inch Ginger Root

1 Tsp.  Curry Powder

1 C. Fresh Coconut Meat

2 C. Coconut Water

2 C. Water

2 Scallions

1 Avocado

Pinch of Cayenne

Add shiitake to soup and serve.
