Miso Sweet Potato Spinach

Want to feel more connected to the earth? Get rooted with this delicious fresh sweet potato salad seasoned with miso and tahini!

Start by putting the following ingredients into your blender...

2 oz. Lemon Juice

1 inch Slice of ginger (sliced)

2 C. Sliced Parsnip

Pour water into blender so it doesn't quite cover theĀ parsnips and blend till creamy.

Add the following to your blender...

1 Tbsp. Miso

1 Tbsp. Tahini

Blend it again.

Toss with your favorite ratio of spinach and shredded sweet potato, and enjoy!
